Homestead Heritage!

I went out to Homestead Heritage with a good friend of mine to play around with cameras and different lenses! I was definitely not used to using a Canon 7D, but I was really excited I got to try it!

Here are a few shots from the afternoon yesterday :)





I loved getting to use a lens that allowed me to get shots of butterflies without having to get too close!


We found a cute herb garden! Unfortunately, a lot of the plants were suffering a little bit from the extreme heat during this part of the summer.





They had a bunch of handmade soaps in one of the stores :)


Taking pictures was a lot of fun! I really hope one day that I can invest in such a nice camera, but for now I'm grateful that I have my canon T3 :)

Salad!

This is one of my favorite salads, mainly because you get to make the dressing that goes with it! It's really tasty and very healthy. An added bonus is that it's also fast and easy :)


This is a Strawberry and Chicken Salad :) I originally found this in Good Housekeeping.

You need:

1 lb. of strawberries - sliced
3 Tbsp. of fresh lime juice 
2 tsp of honey (I added 2 tbsp. because I love honey :)
1 tsp of olive oil (I also added a little extra)
Salt and pepper
1 container of baby spinach
10 oz. of chicken breast from rotisserie chicken - shredded
and 3/4 cup walnuts (I found mine in the baking aisle)


1. In a blender, puree 3/4 cup strawberries with the lime juice, honey, oil, and salt and pepper to taste. Set aside in serving bowl.
2. To bowl with dressing, add spinach, chicken, and remaining strawberries; toss to coat. I generally just pour the dressing on top to make it easier. Then sprinkle the salad with walnuts.

New school year!

So the last year of my undergraduate degree is about to start in less than two weeks! I'm really excited, and super terrified because that means its time to start getting ready for graduate school. Aside from that, a new school year means school supplies and new clothes!

I get to be a little nerdy and show off a couple things I got for the new year :)


This one excites me because I got to use my very limited scrapbooking skills to make a new cover for one of my binders. Not sure which class to use it for yet.



I also made the spiral on the left :) The middle book is my new planner and the blue spiral was just awesome.


Since it's my senior year I also get to give a senior recital, and it wouldn't be complete without the perfect dress. I found this awesome gem at a Dillard's on clearance because someone had returned it from an online purchase. It was quite the steal :)

The best pie...ever.

So I decided to make some dessert to take to my friend's apartment for dinner tomorrow night! It might be my favorite dessert in the world, and it's super easy to make!



Buttermilk Pie!


Doesn't it look good?

Here's my recipe :)

1 1/3 cups of sugar
3 Tbsp. of flour
2 eggs, beaten
1/2 cup of butter, melted
1 cup of buttermilk
2 tsp. of vanilla (I always add a little extra)
1 unbaked 9-inch pie shell

Combine sugar and flour, mixing well. Add the eggs, butter and buttermilk, beating well. Stir in the vanilla. Pour into pastry pie shell. Bake at 400 for 10 minutes, then reduce the heat to 325 and bake for 30-35 more minutes.


Definitely a dessert worth your time :)
